Classical definition
جَمْعُ المُذَكَّرِ السَّالِمُ مَا دَلَّ عَلَى أَكْثَرَ مِنَ اثْنَيْنِ بِزِيَادَةِ وَاوٍ وَنُونٍ أَوْ يَاءٍ وَنُونٍ، يُرْفَعُ بِالوَاوِ.
(الألفية)
What it is

The sound masculine plural keeps the singular word intact and simply adds an ending: ـُونَ in the rafa' state and ـِينَ in nasb and jarr — مُسْلِمُونَ / مُسْلِمِينَ. “Sound” (salim) means the word is not broken or reshaped, only suffixed. It is used mostly for male, rational beings.
